JAC'S Southwestern Frittata
3 Tbsp Margarine + 1 Tbsp Olive Oil
9 Eggs - Cracked, Shelled, and Scrambled up in a glass bowl
½ Cup - Half & Half or Milk - No less than 2%
Salt & Pepper to Taste
Cooking Spray
½ Cup Roasted Red Bell Pepper Bottled in Water Instead of Oil - Chopped Coarsely
½ Small Shallot - Sautéed and Chopped Coarsely
1 Plum Tomato - Seeded and Chopped Coarsely
1 Cup Southern Style or Shredded Hashbrowns, Fried and set aside on paper towels
1 Cup JAC'S Tailgater's Award Winning Salsa
1 Small Can Chopped Green Chile's - Mild, Medium, or Hot
1 Jalapeno - Chopped Finely and Seeded - Optional
LA Hot Sauce - Optional
¾ Cup Shredded Cheddar Cheese***
¾ Cup Shredded Monterey Jack Cheese***
Additional Salsa for Topping - Optional
Sour Cream (optional)
Preheat Oven to 400 degrees.
Heat 12 inch nonstick skillet with an oven safe handle over moderate heat. Add margarine and oil and melt together, turning pan to coat bottom and sides evenly. Whisk eggs & Half & Half or milk together, add salt and whisk again. Set aside and spray top and bottom of a nonstick spatula. Pour eggs & cream into the skillet. As eggs set, lift up bottom skin that has formed and allow uncooked eggs to settle. Keep doing this as eggs brown until just before the eggs begin to set. Remove from heat and add Bell Pepper, Shallot, Tomato, Hashbrowns, JAC'S, Green Chiles and Jalapeno and Hot Sauce if desired, being careful to distribute all ingredients evenly. Place in the oven for about ten minutes until slightly golden on top. Top with cheese and return to oven for 3 - 5 minutes or until cheese is melted, bubbly and slightly brown. Cut in wedges to serve. You can top this with a bit more salsa and sour cream if desired.
***If your grocery store carries the block of white melting cheese used in many Mexican restaurants you may want to substitute this for the two cheeses and if you like it spicier/hotter you can use the one with jalapenos. Just cut the block into Julienne strips.
Cook's Corner - If your skillet doesn't have an oven safe handle, wrap the handle in about three or four layers of foil.
